Open pan salt making
In Europe virtually all domestic salt is obtained by solution mining of underground salt formations although some is still obtained by the solar evaporation of sea water. Salt is extracted from the Brine using vacuum pans, where brine is heated in a partial vacuum in order to lower the boiling point. In the past salt has been extracted by heating the brine in pans operating at normal atmospheric pressure, known as open pans.

Make risotto in less than 30 minutes with SousVide Supreme, and you'll never have to worry about over-cooking or under-cooking again. For this modernist take on the Italian staple, we use the whole beet to create a beautiful ruby red–and-emerald dish with deep, savory flavors. Freshly-shaved parmesan enhances the soft, chewy texture, and adds a slight nutty flavor, while finely-sliced beet greens contribute a pleasant crunch. Though it's not necessary to use beet juice as cooking liquid (indeed, you can substitute any ratio of stock or water instead), we love how the super-absorbent short-grain rice soaks up the earthy beet flavor, and turns the rice a vibrant magenta. Traditionally, risotto is painstakingly prepared in an open pan, to which cooks gradually add a bit of cooking liquid at a time, stirring constantly until all the liquid is absorbed. Then, more liquid is added in order to further soften the rice. This cooking method essentially erodes the starches on the surface of the rice grain, freeing them to thicken the cooking liquid added to the pan, and building up the thick, gummy texture we expect in great risotto. With this method, the rice is stirred constantly in order to prevent scorching, as starch burns easily. If cooked properly, the entire outside of the rice grain will be soft and supple, while the inner kernel remains firm and chewy. Cooks use an open pan and add small amounts of liquid at a time in order to control temperature and consistency. Making risotto in a SousVide Supreme mimics the open pan, and maintains precise enough temperature control to prevent scorching. Though it's certainly not the most traditional way to prepare risotto, we like it because it's quick, easy, and amazingly effective. Just another example of the versatility of a countertop water bath. This recipe will take experimentation to scale up or down due to surface-area evaporation inside your SVS, as well as the varying quality, age, and varietal of your rice. But once you have the SVS method down, you really can't go wrong. Play with different flavors and textures as new ingredients come into season: tomatoes work great for summer; pumpkin and butternut squash are always delicious for fall; and fresh peas add textural intrigue to a light, springy risotto.
